EGGLESS CHOCOLATE CAKE 
1 1/2 c. all-purpose flour
1 c. sugar
3 1/2 tbsp. unsweetened cocoa powder
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. cold water
1/4 c. corn oil
1 tbsp. white vinegar
1 1/2 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour 8-inch square cake pan and set aside. Stir together first 6 ingredients in a medium sized bowl. Add remaining ingredients and beat until smooth, about 2-3 minutes (batter will be thin). Pour into prepared pan.

Bake until tester inserted in center comes out clean, about 30-35 minutes. Invert cake onto wire rack and let cool. Frost with frosting of your choice (Cream cheese frosting is a good one). Makes 8-10 servings.
