PINEAPPLE SHERBET 
1 can pineapple tidbits (15 oz.)
Juice from 1 lg. lemon
2 c. sugar
1 qt. half and half
1 pt. whipping cream
Grated rind of 1 lemon

Heat sugar, half and half and grated lemon rind until sugar is melted (do not boil). Let cool. Add lemon juice and pineapple with juice. Partly freeze. Beat with electric mixer. Fold in whipping cream. Freeze. Next day partially defrost and beat again. Freeze and serve. This is an old family recipe. We serve it on Christmas Eve with Christmas cookies, it's a must at our house.
