CARROT-BRAN MUFFINS 
1 1/4 c. milk
2 c. Fiber 1 or other whole bran cereal
1/4 c. oil
2 eggs, beaten
1 3/4 c. shredded carrot
1/2 c. raisins
1/2 c. coconut
1 1/4 c. flour
1/3 c. brown sugar, packed
1/4 c. white sugar
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt

Combine cereal, eggs, milk and oil in a large bowl and let soak about 10 minutes, then add carrots, raisins and coconut.

In a large bowl, mix together the dry ingredients. Add the cereal mixture and stir just until combined. Grease or line muffin pans (with paper cups). Fill about 2/3 full and bake in 350 degree oven 20 to 25 minutes or until toothpick comes out clean when inserted. (18 muffins)
