CARROT BRAN MUFFINS | |
3 c. flour 1 1/2 tbsp. baking powder 2 c. bran 1 1/2 c. vegetable oil 1 1/4 c. brown sugar 1 c. raisins 1 tsp. baking soda 1/2 tsp. salt (optional) 4 eggs 1 tbsp. cinnamon 1/4 c. molasses 3 c. finely grated carrots Sift together; flour, soda, baking powder, salt and cinnamon. Add bran and set aside. Beat eggs, adding raisins, oil, sugar and molasses. Fill 24 greased muffin tins 3/4 full (I use Pam spray). Bake at 350 degrees for 25 minutes. Makes 24 large muffins. |
