GRASSHOPPER CHEESECAKE | |
1 1/2 c. chocolate cookie crumbs (about 42-1 1/2 inch cookies, crushed) 1 tbsp. sugar 2 tbsp. butter, melted 2 (8 oz.) cream cheese, at room temp. 1 c. sugar 3 eggs 1/4 c. creme de menthe 2 tbsp. creme de cacao 4 oz. sweet cooking chocolate 1/2 c. sour cream In a small bowl, combine cookie crumbs, 1 tablespoon sugar and melted butter. Press into bottom and 1 1/2 inches up the side of an 8 inch springform pan. Refrigerate crust. Preheat oven to 350 degrees. In a large bowl, cream cheese with 1 cup sugar. Add eggs, beat until smooth. Stir in creme de menthe and creme de cacao. Pour into prepared crust and bake for 40 to 45 minutes. Cool. Melt chocolate, cool for about 5 minutes, then stir into sour cream. Spread over cooled cheesecake. Refrigerate until set. Serves 10 to 12. |
