SCALLOPED POTATOES 
1/4 c. finely chopped onion
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
4 c. Russet potatoes, pared and thinly sliced
3 tbsp. butter
2 c. milk
Paprika

Combine onion, flour, salt and pepper. Place 1/3 of the potatoes in a greased 2-quart baking dish. Sprinkle with half the flour mixture. Dot with 1 tablespoon of the butter. Repeat with another third of the potatoes and final half of flour mixture and 1 tablespoon of butter.

Pour milk over to barely cover potatoes. Sprinkle with paprika. Bake, covered, at 325 degrees for 45 minutes. Uncover dish and bake 30 minutes longer, or until potatoes are tender.
