WHOLESOME RICE PUDDING 
2 c. cooked brown rice
2 c. rice milk (whole milk may be used)
2 eggs
1/4 tsp. cinnamon
1/2 tsp. nutmeg
1/3 c. maple syrup
1/3 c. walnuts (optional)
1/3 c. raisins (optional)
1 tsp. vanilla
4 c. casserole dish

Preheat oven to 350 degrees. In large mixing bowl, beat eggs. Add rice, milk, vanilla, brown rice, cinnamon, nutmeg, maple syrup. Blend well. Fold in walnuts and raisins. Pour in casserole bowl. Grease casserole dish with canola or safflower oil. Bake for approximately 1 hour - rice will thicken upon standing.
