HEARTY LEGUMES AND BEEF SOUP 
6 c. water
1/2 c. dried red kidney beans
1/2 c. dried green split peas
1/3 c. uncooked reg. long grain rice
1/2 pound lean beef boneless round steak
1 med. onion chopped about 1/2 c.
2 tbsp. vegetable oil
1 can (16 oz.) whole tomatoes undrained
3/4 tsp. salt

Heat water and beans in dutch oven till boiling. Boil 2 minutes remove from heat. Cover and let stand 1 hour. Heat water and beans to boil, reduce heat, cover and simmer 1 hour. Do not boil or beans will burst. Add peas and rice. Heat to boiling; reduce heat, cover and simmer about 20 minutes or until beans and rice are tender. Trim fat from beef, cut into 1/2 cubes. Cook onion in oil in 10 inch skillet over medium heat, stirring frequently, until tender. Add beef, brown well. Place meat, onions, tomatoes and salt into Dutch oven with other ingredients. Simmer 1 to 2 hours until beef is tender.
