BANANA-NUT CAKE 
2 1/3 c. all purpose flour
1 2/3 c. sugar
1 1/4 c. mashed bananas, about 3 med. (use 1/4 to 1/2 c. more for moisture cake)
2/3 c. shortening
2/3 c. milk
3 eggs
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 c. finely chopped walnuts

Heat oven to 350 degrees. Grease and flour 13 x 9 pan or two 9 inch layer pans. Beat all ingredients in large mixer bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into pan(s). Bake until wooden pick inserted in center comes out clean, 13 x 9 inch pan, 45-50 minutes, layer pans, 35-40 minutes. Cool cake. Frost with Vanilla Butter Frosting.
