APPLE WALNUT SUPREME CAKE 
4 c. chopped peeled apples
2 eggs
2 c. flour, sifted
2 tsp. baking soda
2 tsp. cinnamon
1 3/4 c. sugar
1/3 c. Crisco oil
2 tsp. vanilla
1 tsp. salt
1/2 c. chopped walnuts

Preheat oven at 350 degrees. Combine apples and sugar. Set aside. In large mixing bowl, mix eggs, oil and vanilla. Beat 1 minute at medium speed. Add combined dry ingredients alternating with apple mixture. Stir in walnuts.

Bake in greased and floured 13 x 9 x 2 inch pan for 45 to 50 minutes. Do not overbake. If desired drizzle top of cooked cake with lemon glaze.

GLAZE:

1 c. confectioners' sugar
1/2 tsp. vanilla
1 1/2 tbsp. lemon juice
1 tsp. corn syrup

Combine above ingredients for lemon glaze.
