CHILI RELISH 
36 lg. tomatoes
12 lg. onions
8 green peppers
3 stalks celery
5 c. vinegar
4 tbsp. salt
2 tsp. ground nutmeg
2 tsp. cinnamon
1 tsp. ground cloves
1 1/2 c. sugar
1 tsp. allspice

Scald 12 tomatoes at a time, then peel and dice. Add onions, peppers and celery, finely chopped. Add to the vinegar, salt, nutmeg, cinnamon, ground cloves, sugar, and allspice. Boil all the ingredients 2 hours. If tomatoes are very juicy you may have to boil longer to get the consistency of a relish.
