ICE BOX BRAN MUFFINS 
1 c. boiling water
2 c. bran flakes cereal
1/3 c. brown sugar
2 eggs (4 egg whites)
1 c. oats
2 1/2 tsp. baking soda
1/2 c. chopped nuts and or dried fruit (optional)
1 c. All Bran cereal
1/2 c. shortening
1/3 c. honey
2 c. buttermilk
1 3/4 c. flour

Mix boiling water and cereals and let stand a few minutes. Stir in shortening, sugar and honey. Mix eggs and buttermilk; add to cereal. Sift flour and soda, stir into cereal mixture. Add oats, nuts and fruit. Store batter in covered container in refrigerator, up to 6 weeks. Bake in preheated oven at 400 degrees for 15 minutes in greased muffin tins or cupcake liners. Yield: 2 to 2 1/2 dozen.

1 muffin = 1 starch and 1 fat.
