MOCK CRAB CAKES 
2 c. grated zucchini
1 c. Italian bread crumbs
2 eggs, beaten
1 tbsp. mayonnaise
1 tsp. Bay seasoning
1 c. finely chopped onion

Mix all ingredients together in a bowl. Fry in hot oil for about 2 to 3 minutes until browned. Turn cakes over and fry on other side until brown.
