MARBLE CAKE
10 eggs, separate egg yolks & whites
1 pkg. unsalted butter (200 grs. = 1 c.)
10 tbsp. flour
2 tsp. baking powder (mix with flour)
2 c. sugar
2 tbsp. powdered milk
1/2 chopped almonds or nuts (optional)
2 tsp. vanilla
Grated rind of 2 lemons (optional)
6 squares unsweetened chocolate (1/2 pkg. of a "Corona" baking chocolate bar or a whole bar of "Breick")

Melt with 2 teaspoons evaporated milk on a double boiler or microwave oven. Preheat oven to 300 degrees F. or 180 degrees C.

Beat egg whites until stiff. In a separate bowl, cream the butter with the egg yolks, sugar, powdered milk and vanilla. Add the flour and baking powder, one spoon at a time beating the mixture at a low speed. With a wooden spoon fold the egg whites with the batter until well blended. Add the chopped nuts and grated lemon rind.

Grease a large cake pan and sprinkle it with bread crumbs or flour. Empty a little over half of the batter into the pan. With a wooden spoon fold the melted chocolate with the remaining half and pour over. Bake during 1 hour or 1 hour and 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
