CONGEALED SALAD WITH FRESH FRUIT 
3 env. unflavored gelatin
1 1/4 c. cold water
1 2/3 c. boiling water
2 c. grated Cheddar cheese
3/4 c. mayonnaise
1 tsp. dry mustard
1/4 tsp. cayenne pepper
1 tsp. salt
3 tbsp. pimento, chopped
3 tbsp. stuffed olives, chopped
1 tbsp. lemon juice

Soften gelatin in cold water. Add boiling water and stir until gelatin is dissolved. Chill until slightly thickened. Beat with electric beater until fluffy.

Combine cheese, mayonnaise, mustard, salt, cayenne - mix well. Fold into gelatin then fold in pimento and olives. Turn into 1 quart oiled mold. Chill until firm. Garnish with assorted fruits sprinkled with lemon juice.
