SUMMER SALAD 
3 c. iceberg lettuce, shredded
4 c. mixed fruit: strawberries, blueberries, raspberries, cantaloupe, peaches,
apricots, or nectarines
1 c. cottage cheese
1 pt. low-fat yogurt: raspberry, blueberry, or strawberry
1 1/2 c. rice pudding

Line serving platter with lettuce. Arrange fruit over lettuce and top with scoops of cottage cheese, yogurt and rice pudding. Approximately 4 servings.
