SPLIT PEA SOUP | |
1 lb. green split peas 1 ham bone or 1 c. cut up ham 3 qt. water 1/4 c. green pepper, finely chopped 1 large onion, chopped 1 clove garlic, chopped 2 bay leaves 1/4 c. parsley 2 carrots, chopped small 3 to 4 drops Worcestershire sauce salt to taste You will need a 5-quart pot. Rinse peas and add water, salt, green pepper, onion, garlic and bay leaves. Bring to a boil. Cover (tilted lid) and reduce to simmer for about 1 hour. (After 1/2 hour, add carrots and parsley.) Stir every 15 minutes. When soup has cooked down and has thickened, turn fire off and let set for flavor to set in, about 1 hour. |
