SOUR CREAM ENCHILADAS 
1 pt. sour cream
2 cans cream of mushroom soup
1 can diced green chilies
1/2 can diced Ro-Tel
1 onion, chopped
1 1/2 lb. hamburger
10 or 12 corn or flour tortillas
2 c. grated Cheddar cheese

Mix sour cream, soup, chilies and Ro-Tel and set aside. Fry hamburger and onion; drain. In 13 x 9-inch pan, pour half of the sour cream. Break half of the tortillas on top of this. Put all hamburger and half of the cheese on top of this. Next, break up remaining tortillas, then put them, the rest of the sour cream mixture and remaining cheese on top of that. Cover with foil and bake at 350°F for 30 minutes.
