PICKLED FRUIT COMPOTE | |
1 #2 1/2 can pineapple chunks 1 #2 1/2 can peach halves 1 #2 1/2 can unpeeled apricots 1 #2 1/2 can pears 1 (8 oz.) jar maraschino cherries 1 1/2 c. vinegar 1 1/2 c. sugar 2 tbsp. mixed pickling spice tied in bag Drain fruit, reserving liquid from cherries. Combine the vinegar, sugar and cherry juice. Add spice bouquet. Simmer 5 minutes. Add fruit, bring to a boil and simmer 5 minutes more. Discard spice bouquet. Serve warm or cold. This looks pretty in a crystal bowl and enhances almost any ham, chicken or turkey dish. Serves 6-8. |
