CHICKEN CORDON BLEU 
4 chicken breasts, boneless & skinless
4 thin ham slices
4 Swiss cheese slices
1/4 c. olive oil
1 lg. skillet

Butterfly each chicken breast sideways, unfold, lay 1 slice ham and 1 slice cheese in each breast. Refold chicken. Preheat skillet with olive oil over medium heat. Place chicken in skillet, cook 3 to 5 minutes on each side, uncovered. Season with salt and pepper to taste, if desired. Serve with rice pilaf. Excellent with Ranch dressing. Garnish with parsley leaf and orange slice.
