ZUCCHINI AND CHICKEN SUPPER 
8 oz. herb seasoned stuffing mix
3/4 c. melted butter
3 c. cubed cooked chicken
6 c. zucchini, sliced
1 onion, chopped
1 can cream of chicken soup
1 c. sour cream
1 c. shredded carrots

Stir melted butter into stuffing mix. Put 1/2 in bottom of buttered casserole. Layer chicken on top. Cook zucchini and onion 5 minutes and drain. Mix with soup, sour cream and carrots. Spread on top of chicken. Put rest of stuffing mix on top. Bake at 350 degrees for 30 minutes.
