MANDARIN SALAD 
1/4 c. sliced almonds
1 tbsp. plus 1 tsp. sugar
1/4 head lettuce
1/4 head romaine
1/2 c. chopped celery
1/2 c. green onion
1 (11 oz.) can mandarin oranges, drained

DRESSING:

1/4 c. oil
1 tbsp. sugar
2 tbsp. parsley
Dash red pepper
1/2 tsp. salt

Toss together lettuces, celery, and green onion. Refrigerate to keep crisp and cold. Mix together ingredients for dressing by placing in a plastic covered bowl. Shake to mix. Sometimes takes a lot of shaking to dissolve the sugar.

Just before serving, toss in oranges, sprinkle almonds on top and pour on dressing. Pour on dressing just before serving, this salad gets soggy very fast.
