GINGER NUTMEG MUFFINS 
2 c. all-purpose flour
3/4 c. sugar
1 tbsp. baking powder
2 tsp. nutmeg
2 eggs
1 c. milk
2 tbsp. melted butter
1 1/2 tbsp. ground ginger
1 tsp. grated lemon peel

Preheat oven to 375 degrees. Grease 12 muffin cups. Combine flour, sugar, baking powder, and nutmeg.

In another bowl, beat eggs, then beat in milk and butter, then blend in ginger and lemon peel. Add liquid ingredients to dry. Stir just until moistened. Do not over mix. Divide batter into muffin cups. Bake 20 to 25 minutes.
