ITALIAN HAM PIE 
3 lbs. Ricotta cheese
1 lb. shredded Mozzarella cheese
1 doz. eggs
6 c. cooked rice
1 lb. ham
1 tsp. salt
1 tbsp. ground pepper
2 tbsp. parsley
1/2 c. grated Parmesan cheese
Pie crust

Mix together Ricotta cheese and Mozzarella cheese. Slightly beat eggs and add to cheese mixture. Add cooked rice, and mix just until blended. Cut up ham into cubes, not to large, add to mixture. Add salt, pepper and parsley to mixture. Add Parmesan cheese. Do not over mix. Let set for 5 minutes.

Make enough pie crust for both top and bottom (double your own favorite pie crust) for a roasting pan 13 x 9 x 2 inch. Grease bottom of roasting pan lightly and place crust up sides. Add mixture, cover with top crust and make 3 slits on top crust. Bake at 350 degrees for 1 1/2 hours or until crust is lightly browned.
