JELLO POKE CAKE 
1 pkg. white or yellow cake mix (2 layer size)
1 pkg. (4 serving size) Jello gelatin
4 eggs
1/3 c. oil
1 c. water for cake mix
1 container non dairy topping (like Cool Whip) (12 oz.)
1 c. water for Jello

Prepare cake with eggs, oil and water according to package directions.

Bake in 13 x 9 inch pan.

Bake at 350°F for 40 to 45 minutes. Cool in pan for 15 minutes. Poke holes all across the cake with a fork. Dissolve flavored gelatin in 1 cup boiling water. Pour warm gelatin slowly over cake. The gelatin will soak into the cake. Chill 4 hours.

Spread Cool Whip over top. Keep refrigerated.

Has anyone added pudding mix to the cool whip for the topping? Also can put the cool whip on the nigh before or should I do right before serving? I am making for my mother in laws birthday and want it to be nice for her.

It's really good just like it is but if you're making a strawberry one, you can add cut strawberries on top and it's even better. I put the whipped cream in the refrigerator to thaw it while the cake is cooling and add it as soon as the cake is cooled.
