PARSLEYED MASHED POTATOES 
3 lbs. boiling potatoes
4 tbsp. butter
3/4 - 1 c. milk
Salt & pepper
1/2 c. chopped parsley

Cut potatoes into chunks. Put in salted water, bring to a boil and cook until tender, 15 to 20 minutes. Drain the potatoes, peel and mash. Combine butter and 3/4 cup milk and heat until warm. Stir into the mashed potatoes along with 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Add more milk if desired. Stir in parsley. 8 servings.
