HONEY ORANGE CHICKEN 
4 skinless boneless chicken breast halves
1 tsp. nutmeg
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. orange juice
1/2 c. honey
1/4 c. raisins
2 tbsp. cornstarch
2 tbsp. water

Lightly flatten chicken breasts. Sprinkle both sides of chicken with nutmeg, salt and pepper. Combine orange juice, honey and raisins in a large skillet; heat. Add chicken. Cover and simmer 15 to 20 minutes or until chicken is tender; remove. Dissolve cornstarch in water; stir into orange juice mixture, stirring constantly. Return chicken to skillet; heat. Serve chicken and sauce with rice or couscous. Serves 4.
