ZUCCHINI RELISH 
10 c. zucchini
4 c. onion
4 peppers (2 red - 2 green)

1/3 c. coarse salt

Let stand overnight. Drain and rinse with water, drain and squeeze out. Put the drained mixture into a large pan.

2 1/2 c. cider vinegar
4 c. sugar
1 tsp. mustard seed
1 tsp. celery seed
1/4 tsp. black pepper
1 tsp. curry powder
1 tsp. turmeric
1 tbsp. cornstarch
1 stick cinnamon

Boil 30 minutes, stir often, may stick - seal. Recipe may be doubled.
