GREAT HAMENTASHEN DOUGH 
1/2 c. butter, softened
1/4 c. packed dark or light brown sugar
1/4 c. honey
2 lg. eggs
1 tsp. vanilla extract
1 tsp. baking powder
1/2 tsp. baking soda
2 1/2 c. all-purpose white flour (may be half whole wheat flour)

For the dough, use an electric mixer at medium speed to cream the butter with the brown sugar and honey in a medium sized bowl until light and fluffy. Beat in the eggs and vanilla. Then mix in the baking powder, soda and flour until very well combined. Form the dough into a thick circle, wrap it in plastic wrap or wax paper and refrigerate for several hours.
