SPINACH QUICHE 
8 slices bacon
1 c. onion, chopped
3/4 c. dairy sour cream
2 eggs, slightly beaten
1/4 tsp. salt
Dash of pepper
Dash of nutmeg
12 oz. natural Swiss cheese (in 1/4 inch cubes)
1 bag fresh, cooked spinach, drained
1 (9 inch) unbaked pastry shell

Fry bacon, remove from pan when crisp and crumble, set aside. Using bacon grease, saute onion until tender, drain off excess grease. In a medium sized bowl, blend sour cream, eggs, salt, pepper and nutmeg. Add cheese, bacon, onion and spinach, stir. Pour mixture into pastry shell. Bake at 375 degrees for 25 minutes (or until knife inserted in center comes out clean. Serve warm. Serves 6 to 8.
