SHIPWRECK 
This casserole dish was originally made by women who lived along the Jersey shore. When word was sent that a sea disaster had taken place, the women would prepare this dish to have hot food to serve both rescuers and survivors.

2 lg. onions, thinly sliced
6 med. potatoes, thinly sliced
1 1/2 lbs. raw chopped beef
1/4 c. uncooked rice
1 (1 lb.) can red kidney beans
1/2 c. celery, thinly sliced
2 tbsp. parsley
1 green pepper, chopped
1 (12 oz.) can Italian plum tomatoes, cut into pieces (save juice)
Salt and pepper
Old Bay seasoning
Paprika

Slice onion into a large baking dish. Place the following in layers: onions, potatoes, chopped beef. Then, sprinkle a layer of uncooked rice, a layer of celery, and green peppers. Do this until these ingredients are used up. Sprinkle chopped tomatoes on top. Sprinkle with salt, pepper, paprika, and Old Bay seasoning. Pour sauce all over the top of the casserole so that the liquid shows around the edges. Sprinkle parsley on top. Cover pan with lid or aluminum foil and bake at 350 degrees for 1 1/2 hours. Serve hot. Serves 4 to 6.

SAUCE:

1 1/2 c. catsup, barbecue sauce (homemade or bottled) or tomato juice
1/4 c. steak sauce
1/4 to 1/2 c. sugar
Leftover juice from tomatoes
Parsley

Mix ingredients in bowl. Add enough water to make the sauce good pouring consistency.
