ICE CREAM SANDWICHES 
1 1/4 c. all-purpose flour
1/2 tsp. baking soda
1/2 c. butter
1/2 c. packed brown sugar
1/4 c. sugar
1 egg
3/4 tsp. vanilla
1 c. semi-sweet chocolate pieces
1 qt. ice cream, frozen yogurt or sherbet

To make the cookies, turn the oven to 375 degrees. In a medium mixing bowl stir together the flour and baking soda.

With adult help, put the butter in a large mixing bowl. Turn on electric mixer to medium speed for 30 seconds. Add brown sugar and sugar; beat until fluffy. Add egg and vanilla; mix well. Stir in chocolate pieces.

For each cookie, get about 1 tablespoon of dough on a spoon. With the back of another spoon, push the dough onto an ungreased cookie sheet. Leave about 2 inches between each cookie. With adult help, put the cookie sheet in the oven. Bake for 8-10 minutes or until light brown.

Remove cookie sheet from oven; let cookies cool for 1 minute. Use a pancake turner to put the cookies onto a cooling rack. Cool completely. Repeat with remaining dough.

For each cookie sandwich, place a small scoop of ice cream, frozen yogurt, or sherbet on the flat side of one cookie. Top with a second cookie. Place cookie sandwiches on a cookie sheet and freeze until firm.
