CURRIED MINCED MEAT WITH
POTATOES
 
4 tsp. vegetable oil
1 1/4 chopped onion
1 tsp. grated ginger
1 tsp. minced garlic
1 tsp. coriander powder
1 lb. lean round of lamb or beef, minced
1 lb. potatoes
1/4 tsp. chili powder
1 c. well mixed plain yogurt
1 c. water
1/4 tsp. black pepper
1 tsp. lemon juice

In medium size skillet heat the oil and fry the onions until they are golden brown. Add the ginger and garlic and fry them until they are brown (about 4 to 5 minutes). Stir in the coriander powder while stirring constantly, 2 minutes over moderate heat. Add the meat and fry 15 minutes.

Meanwhile wash and peel the potatoes and cut into 1/2 inch cubes. Add them to the meat and fry 5 minutes. Stir occasionally. Add the chili powder and fry an additional minute. Slowly stir in plain yogurt. Add the water and black pepper and bring meat to boil. Reduce the meat to low, stir, cover and simmer until meat is cooked (30 to 35 minutes). Stir in the lemon juice and serve.
