2 c. all purpose flour 1/4 tsp. salt 1 tsp. baking powder 1 c. sugar 2/3 c. sweet butter 4 eggs, separated 2 tbsp. milk 1 tsp. lemon extract 1/2 c. apricot jam 1 c. chopped pecans Preheat oven to 350 degrees. Sift flour, baking powder, 1/2 cup sugar. Cut in the butter as if for pie crust. Combine slightly beaten yolks, milk, and lemon extract. Add to dry ingredients and mix well. Put the dough in a 9 x 12 x 2 inch pan and press it onto bottom and sides to about 1/2 inch thickness. Spread jam on top. Gradually beat remaining sugar into beaten egg whites, until stiff. Spread over jam and sprinkle nuts on top. Bake for 30 minutes. When cool, cut into 2 inch slices. |
