SPINACH, BACON, APPLE SALAD 
1/4 c. olive oil
3 tbsp. red or white wine vinegar
1/2 tsp. prepared mustard
Pepper

Combine in jar and shake well; refrigerate. 1 unpeeled apple, coarsely chopped 3 green onions, thinly sliced 5 slices bacon 1/3 c. sliced almonds

Cook bacon; drain and crumble (save 1 tablespoon fat). Saute almonds in 1 tablespoon bacon fat.

Combine spinach, apple, and onions. Pour dressing over and add almonds and bacon.
