SPINACH SALAD 
1/2 lb. fresh spinach, washed & drained
1/4 lb. fresh mushrooms, sliced
2 green onions, finely chopped (opt.)
1/2 c. Vinaigrette dressing
1/4 lb. blue cheese, cut into cubes
8 slices bacon, crisp cooked & crumbled

Remove stems from spinach and tear leaves into bite size pieces. Place in salad bowl; add mushrooms and onions. Pour dressing over spinach mixture and toss to coat thoroughly. Sprinkle with cheese and bacon; toss lightly. Makes 4 servings.
