SAUERKRAUT SOUP | |
4 or 5 slices bacon (thick) 1 big onion 3 or 4 medium potatoes 2 cans chicken broth 1 can sauerkraut salt and pepper to taste sour cream Dice bacon slices and sauté with diced onion. Peel and dice potatoes. Add to bacon and onion. Pour in chicken broth and cook until potatoes are tender. Drain sauerkraut, saving juice. Add kraut. Add juice to suit your taste. Add pepper and salt if needed. If chicken broth does not have enough flavor, you can add chicken bouillon cube, which is salty so be careful about adding salt. Serve with a large spoon of sour cream on top of each bowl. |
