TEXAS APPLE CAKE 
2 c. sugar
1 1/2 c. Wesson oil
2 eggs
3 c. chopped apples (peeled)
3 c. flour
1 1/2 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
1 c. chopped pecans

Mix sugar, oil and eggs. Add apples. Chop one cup at a time so they do not turn dark. Sift flour with soda, spices and salt. Add gradually to batter, mix well and add chopped pecans. Bake in greased and floured bundt pan at 350 degrees for 1 hour. Ice when cool with 1 cup powdered sugar with juice of lemon (one slice). Drizzle over top. Also good with just whipped cream.
