JAM CAKE | |
5 eggs, beaten 2 c. sugar 3 c. flour 1 c. butter or shortening 1 c. buttermilk 1 tsp. baking soda 1/4 tsp. salt 1/2 tsp. cinnamon 1 1/2 tsp. cloves 1 1/2 tsp. allspice 1 c. raisins or chopped dates 1 c. chopped nuts 1 c. jam (I use blackberry) Cream butter and gradually add the sugar. Cream together until fluffy. Add beaten eggs. Sift the flour before measuring, and add the spices and salt to it. Dissolve soda in buttermilk and add it and the flour mixture alternately to the egg sugar and butter mixture. Beat after each addition. Lightly dredge the fruits and nuts with extra flour and add. Next, add jam. Stir to get good distribution. Grease and paper line 2 (9 inch) cake pans and fill pans each about 2 inches deep. Bake at 325 degrees for 40 minutes. Ice with caramel icing or whatever you like. |
