BANANA BREAD 
1 c. brown sugar
1/2 c. butter
1 tsp. vanilla
1 1/2 to 1 3/4 c. ripe bananas, mashed (3 lg.)
2 eggs, well beaten
2 c. sifted whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. chopped pecans, almonds, or walnuts; optional

Preheat oven to 350 degrees. Grease loaf pans (one 9 x 5 loaf or two small loaves).

1. Cream sugar and butter.

2. Add vanilla and mashed bananas.

3. Add eggs.

4. Sift all dry ingredients together.

5. Add dry ingredients to cream mixture with nuts.

6. Pour into 1 large loaf pan or 2 smaller loaf pans.

7. Bake at 325-350 degrees for 1 hour or until cake tester comes clean.

8. Allow to cool 20-30 minutes before removing from pan. They taste better the next day.
