1 1/2 c. (3 sticks) butter, softened 3 c. sugar 6 eggs 3 c. all-purpose flour 1/4 tsp. salt 1/4 tsp. baking soda 1 c. dairy sour cream 1 tsp. vanilla 1 pkg. coconut flakes Cream butter with mixer, add sugar slowly until light and fluffy. Add eggs one at a time, beating well after each addition. Sift flour, salt and soda three times. Add alternately with sour cream to egg mixture, beginning with and ending with flour mixture. Add vanilla and coconut. Pour into 10-inch tube pan or Bundt pan. Bake at 300°F for 1 1/2 hours. |
