CHOCOLATE COCONUT BALLS 
1 c. mashed potatoes
1 lb. confectioners' (10x) sugar
4 c. coconut
1 tsp. almond extract

Combine well. Chill 1 hour. Roll into balls; dip in light or dark chocolate which ever you like best. Place on wax paper and chill. Store in airtight container.

Light chocolate tastes like Almond Joy. Dark chocolate tastes like Mounds Bar.
