VEGETARIAN TACO FILLING 
My family loooooves these!

2 large potatoes, cut into small cubes
1 large onion, diced
1 cup frozen peas
2 tbsp. water
3 tbsp. olive oil
1 pkg. meal starters (or your fav. vegetarian ground beef substitute)
salt, to taste
1/3 cup prepared tomato salsa (from a jar)

Place first 4 ingredients in a medium, microwave safe bowl. Cover with plastic wrap leaving one small vent for steam to escape. Microwave on high, 8 minutes.

Meanwhile, heat the olive oil in a large frying pan, add the meal starter and brown over medium low heat. Add the microwaved vegetables to the pan stirring and browning lightly over medium high heat, stirring for about five minutes. Just a few minutes before serving stir in the salsa.

Serve as crunchy or soft tacos with your choice of taco fillings.
