EGGPLANT PARMESAN 
1 lg. eggplant
2 eggs, beaten
1 3/4 c. Parmesan cheese
1/4 tsp. basil
1 tbsp. minced parsley
1/2 c. Italian bread crumbs
1/2 c. butter
1/4 lb. sliced (or grated) Mozzarella

SAUCE:

1 lg. can tomatoes
Italian seasonings to taste
Garlic powder to taste

Simmer ingredients for sauce. Slice unpeeled eggplant Dip in egg wash then mixture of Parmesan cheese and bread crumbs and seasonings. Chill 1 hour. Brown in skillet and assemble in layers. Bake until cheese melts at 375 degrees for 15 minutes. Mike like this in one layer eggplant, sauce, cheese.
