APPLESAUCE JAM CAKE | |
SUGAR MIXTURE: 2 c. white sugar 1 c. butter or Crisco 2 eggs, beaten 1 c. blackberry jam 3 c. unsweetened applesauce 1 tsp. vanilla Combine in a bowl. DRY MIXTURE: 4 c. plain flour 1 tsp. cinnamon 4 tsp. baking soda 1/4 tsp. salt 1/4 tsp. allspice 1/4 tsp. cloves Sift together. After dry ingredients have been sifted together, add 2 cups chopped nuts and 2 cups raisins. Mix well and add to the sugar mixture. Put in a large tube cake mold lined with well-greased brown paper in bottom. Bake at 250 to 300 degrees for 2 1/2 to 3 hours. Serve plain or with caramel icing. |
