BROCCOLI CHEESE SOUP 
3 slices bacon, diced
4 scallions, chopped
1 med. carrot, chopped
1 rib celery, chopped
1/4 c. quick-cooking oatmeal
2 1/2 c chicken broth
1/3 c. dry white wine
1/4 c. heavy cream
1/4 tsp hot pepper sauce
1/8 tsp. Worcestershire sauce
1/8 tsp. pepper
1 c. shredded Cheddar cheese
1 c. cooked chopped broccoli

In large saucepan, cook bacon over medium-high heat until crisp. Drain on paper towels. Discard all but 2 tablespoons bacon fat, cook scallions, celery and carrot until tender, about 15 minutes. Stir in oats, chicken broth and wine. Reduce heat, cover and simmer 25 minutes. Stir in cream, hot pepper sauce, Worcestershire and pepper. Fold in broccoli; heat through. Garnish with bacon and cheese.
