FISH FILLETS FLORENTINE 
1 1/2 lbs. fillet of sole
1/4 c. melted butter
3/4 tsp. salt
1/8 tsp. pepper
2 tsp. lemon juice
1 1/2 c. Italian bread crumbs, mixed with 1 tbsp. chopped parsley
1/3 c. grated Parmesan cheese

Arrange fillets in buttered dish. Brush fillets with butter; season with salt, pepper, and lemon juice. Sprinkle top of fillets generously with crumbs. Pour remaining butter over fish. Bake in 350 degree oven until tender 25 minutes. Baste with additional butter, if needed. Sprinkle with Parmesan cheese and return to oven to melt cheese, about 5 minutes.
