BUTTERMILK PIE 
1 1/4 c. sugar
3 tbsp. all-purpose flour
4 eggs, lightly beaten
1/2 c. unsalted butter, melted and cooled
1 c. buttermilk
Zest of 1 lemon (no white outer layer)
1 tbsp. fresh lemon juice
1 tsp. vanilla
Nutmeg to taste
1 (8 1/2 inch) baked pie shell, well chilled

Combine sugar and flour in large mixing bowl. Add beaten eggs and mix well. Stir in butter and buttermilk. Stir in zest, lemon juice, vanilla, and nutmeg. Pour into pie shell. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees for 40 minutes or until filling is set. Remove to wire rack. Serve when completely cooled.
