KAY'S MINESTRONE SOUP 
1 lb. ground beef or sausage
1/2 c. chopped onion
1 clove garlic, minced
4 c. water
1 tbsp. bouillon
1 (16 oz.) can tomatoes, chopped, undrained
1/2 c. chopped carrots
1 tsp. sugar
1 tsp. basil
1/2 tsp. nutmeg
2 c. sliced or grated zucchini
2 c. torn fresh spinach
1/2 c. accini de pepe

Brown meat and drain. Add remaining ingredients except zucchini, spinach and pasta. Simmer 45 minutes. Just before serving, add zucchini, spinach and pasta. Heat thoroughly. Garnish with Parmesan. We like to add about 1/3 cup cut-up pepperoni for flavor. Serves 8.
