SWEET POTATO CRUNCH 
3 c. mashed sweet potatoes
1 c. sugar
2 eggs
1 stick butter
2 tsp. vanilla
1 c. brown sugar
1 c. chopped nuts
1/3 stick butter, melted
1/2 c. flour

Wash and cook potatoes until tender. Cool slightly and beat in mixer. Add sugar, eggs, butter and vanilla; mix well. Pour in casserole dish. To make topping, combine brown sugar, chopped nuts, melted butter and flour. Cover potatoes with topping.

Bake at 325°F for 30 minutes.
